In Wisconsin, brats & beer go hand in hand. When I moved to Austin, Texas, I knew I needed to bring this food of my heritage to the Lone Star state. Luckily for me, Longhorn fans share my love of brats. When I was first asked to cater a football party through my personal chef biz, Cielo Su Terra, I was eager to show off my Wisconsin-style cuisine. I couldn't keep enough bratwurst on the buffet table. The response from the crowd inspired me to start up a second business.
When a fellow Wisconsinite asked me to make the brats for a Packers party, I knew I was headed down the right track. All the festivals around Austin are just a part of what make this city great. Combine that with all the food trucks popping up around town, and I knew I had the perfect opportunity to build a trailer and begin selling my unique-to-Texas brats. So, I did just that.
